Italian Chicken and Soya Bean Soup


500g chicken breasts, cubed

1 ½ tsp. garlic, crushed

350g baby potatoes, quartered

2 carrots, sliced

1,2L chicken stock

160g OJA! Dry Roasted Soya Beans

1 onion, sliced

30ml flour

Salt and pepper to taste


  1. Soak the Oja! Dry Roasted Soya Beans in boiling water for 20 minutes, drain the excess water and set aside.
  2. Season the chicken with salty and pepper.
  3. Heat olive oil in a sauce pan over a high heat, add the chicken and cook, stirring occasionally until browned. Remove from the pan and set aside.
  4. Add the onions and garlic to the pan and fry until translucent.
  5. Add the carrots and the OJA! Dry Roasted Soya Beans to the pan and fry for a further 3 minutes.
  6. Add ½ cup of chicken stock to the pan and continue to stir the vegetables.
  7. In a small bowl, add a small amount of stock to the flour and create a smooth paste.
  8. Add the paste to the pan, along with the remaining liquid and potatoes.
  9. Bring the liquid to a gentle simmer for 20 minutes, or until the potatoes are tender and cooked through.
  10. Add the chicken and allow to simmer for a further 15 minutes.
  11. Remove from the heat, season and serve warm.
